Crock Pot Pizza December 18, 2016

Crock Pot Pizza

Ingredients:

1 Package Kluski Nodles

1 lb. ground beef

1 teaspoon dried onion

1 can pizza sauce

8 oz spaghetti sauce

8 oz shredded cheddar

8 oz shredded mozzarella

1 package pepperoni or pre cooked Italian sausage

 

Method:

  1. Cook and drain the noodles.
  2. Rinse with cold water and set aside
  3. Brown the ground beef and onion.
  4. Drain fat off.
  5. Add the sauces to the meat and simmer 10 minutes.
  6. Layer the ingredients in a large crock pot in the following order:
    1. Noodles
    2. Meat Sauce
    3. Ceddar
    4. Mozzarella
    5. Pepperoni or Italian Sausage
  7. Repeat the layers a second time.
  8. Cover and cook on low until warmed through and cheese is melted.

Maid Rites

Maid Rites

Ingredients:

2 Tablespoon dried onion

1 Tablespoon warm water

3 lbs ground beef

2 beef bullion cubes

1.5 cups water

2 Tablespoon Worcestershire Sauce

1 Tablespoon soy sauce

2 Tablespoon cider vinegar

2 Tablespoons brown sugar

 

Method:

  1. Turn crock pot to high.
  2. Add onion and 1 Tablespoon water.
  3. Gather other ingredients and stir in.
  4. Cover and cook for 4 hours on high (6-8 hours on low).
  5. Stir occasionally

Roasted Butternut Squash and Fennel Soup October 30, 2016

Ingredients

  • 2 tblspn EVOO
  • 1 medium butternut squash, peeled, seeded, and cubed into 1 inch pieces
  • 1 fennel bulb, green part discarded, cut into 2 inch pieces
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 4 cups chicken stock
  • 1/2 tsp thyme
  • pinch nutmeg
  • 1/4 cup half & half

Method

  1.  Preheat oven to 425.  Toss the squash and fennel with 1 tbl EVOO, season with salt and pepper, and spread on a baking sheet.  Roast 15-20, or until squash is tender
  2. Heat the remaining EVOO in a soup pot, add onion, garlic and thyme.  Saute until the onion is opaque.
  3. Add the roasted vegetables and chicken stock.  Bring to a boil, reduce heat and simmer for 10 minutes.
  4. Add nutmeg.
  5. Blend with an immersion blender until smooth.

COCONUT POKE CAKE

INGREDIENTS
1 package white cake mix, plus ingredients listed on box to prepare cake
1 (14 ounce) can cream of coconut
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) container frozen whipped topping, thawed
1 cup shredded coconutDIRECTIONS
1. Prepare and bake white cake mix according to package directions for a 9×13 inch cake.

2. In a medium bowl, whisk together the cream of coconut and sweetened condensed milk.

3. Remove cake from oven and place on a cooling rack. While still hot, use a skewer to  poke holes all over the top of the cake.

3. Spoon the cream of coconut and sweetened condensed milk mixture over the cake while the cake is still hot.

4. Let cake cool completely. Top with whipped topping and shredded coconut.

5. Cover and refrigerate overnight before serving.

Sweet & Sour Lentils June 28, 2016

Sweet & Sour Lentils

 

Ingredients:

2/3 cup lentils

3 cups water

1 clove garlic

1/4 cup honey

1/4 cup pineapple juice

pineapple from can

1/4 cup white vinegar

salt to taste

dash ground cloves

 

Method:

Cover lentils with water.  Bring to a boil and then simmer for 30 minutes.  Drain.

Add all remaining ingredients.  Stir gently over medium low heat until all are warmed through.

 

Maple Dijon Vinaigrette June 16, 2016

Maple Dijon Vinaigrette

  • 1/3 cup cider vinegar
  • 2 Tbl real maple syrup
  • 1 Tbl Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2/3 cup EVOO

Method:

Pour all ingredients into a jar and shake until well blended.

 

Beef Brisket & Carla’s BBQ Sauce January 10, 2016

Beef Brisket

  • Beef Brisket
  • Add liquid smoke
  • Worcestershire Sauce
  • Garlic Salt

Method

  1. Score brisket lightly on both sides.
  2. Place brisket in oven turkey bag overnight, adding the above ingredients and rubbing in well.
  3. Place in pan and bake 5 hours at 275.
  4. Open bag and add 1/2 cup BBQ sauce.
  5. Return to the oven and bake for an additional hour.
  6. Add additional BBQ sauce if desired.
  7. Hold in 200 degree oven until ready to serve.

Carla’s BBQ Sauce

  • 2 Tbl butter
  • 2 cloves garlic, minced
  • 1 cup ketchup
  • 2 Tbl brown sugar
  • 1 Tbl Worcestershire sauce
  • 1 Tbl liquid smoke
  • 1 tsp salt
  • 1/4 tsp pepper

Method:

  1. In a 1 quart saucepan over medium heat, melt butter and cook garlic for 2-3 minutes, until lightly browned.
  2. Add the remaining ingredients.
  3. Heat to boiling.
  4. Reduce heat to low.  Cover and simmer 10 minutes, stirring occasionally.
